Meatballs

Ingredients:
1 1/2 pounds of horsemeat (or if you can't find this use lean turkey or chicken or even extra lean ground beef)
1/2 cup chopped onion
1 egg slightly beaten
1 cup oat bran or breadcrumbs
2 tbsp fresh parsley, finely chopped
2 tbsp fresh basil, finely chopped
2 tbsp oregano (use fresh if you can, but I didn't put any in at all)
2 cloves garlic, chopped
1 tsp salt
1 tsp ground black pepper

Preparation:

1.  Preheat oven to 400

2. In a large bowl place egg and oat bran.  Add spices and mix well.  Add remaining ingredients and mix well.  Ask your kids to put their hands in the mess and make the meatballs.  They'll like it, and you won't have to do it!! Win, win! Place on foil covered baking sheet and bake for 20 minutes.
