Chicken Tacos


2 lbs. chicken breast (cut in very thin strips)
1 tbsp. olive oil
1 tbsp. chili powder
2 tsp. cumin
2 tsp. of sugar or Splenda
3 tbsp. fresh cilantro

other ingredients:
whole wheat tortillas (heated in oven)
cheddar cheese (grated)
lettuce (shredded)
low-fat sour cream

Heat oil in large non-stick skillet. Cook the chicken strips in the oil until cooked, turn down heat and add the spices and sugar or Splenda. Right before serving, add the fresh cilantro. Serve chicken on whole wheat tortillas. Top with lettuce, green salsa, dollop of low-fat sour cream, and grated cheddar cheese.

These would be good with tomato salsa, but the green salsa and the cilantro are a wonderful combination.

Enjoyed looking at your recipes - so I hope you are able to keep up with this. I'm always looking for ideas and variety for our diet.

Fwiw - we can't get sour creme in Niger, so we've found plain yogurt to be a good substitute - so much so that the kids and I now prefer it to real sour creme. Tim, on the other hand, just thinks we are wierd.
