Healthy Salmon Cakes

serves 6
2 cans (240g) cans red salmon
1/4 cup oats
1/2 cup low-fat cottage cheese (drained)
2 egg whites
2 tbsp chopped fresh chives (or fresh green onions)
2 tbsp chopped fresh cilantro
salt
pepper

1. Mix all ingredients together.
2. If the mixture is too soft add more oats.
3. Shape into cakes
4. Spray non-stick frying pan and cook until golden on each side

These are so easy to make, so nutritious, and very easy on the grocery budget.
