Chicken Salad Pita

This chicken salad has an Indian flavor to it.  Nice change from the standard chicken salad.

2 tsp Dijon mustard
1 tsp balsamic vinegar
1 tsp curry powder
1 garlic clove, minced
2 tbsp extra virgin olive oil
2 cooked, boneless, skinless chicken breast, chopped
1 stalk celery, chopped
1/3 cups chopped red bell pepper
2 tbsp chopped chives
1/4 cup raisins
1/4 cup cashews (optional)
2 small whole wheat pitas

1. To make the dressing, whisk together mustard, vinegar, curry and garlic in a small bowl.  Whisk constantly, slowly adding olive oil.

2.  In a larger bowl combine chicken, celery, red peppers, chives, cashews and raisins.  Mix in the dressing.

3.  Cut whole wheat pitas in half and fill with chicken salad.  Serve

I found this recipe in Oxygen magazine and changed it a wee bit.  It's nice with lettuce too.

oh yum! I'm always looking for new lunch ideas! I get so bored of the regular turkey sandwich or soup. Thanks for this! :)
